Taste it: Stuffed Bell Peppers

After perusing Pinterest I kept seeing this Santa Fe Turkey Stuffed Peppers recipe so I decided to give it a try. And let me tell you it was a easy, tasty with leftovers no less.  

Gather:
1/2 lb of lean ground beef, ground turkey, ground chicken
3/4 cup canned black beans, rinsed and drained
3/4 cup frozen corn
1 small onion, diced
1 jalapeno, de-seeded and minced
1 garlic clove minced
3-4 Tbl low sodium taco spice
cilantro
salt and pepper
3 bell peppers
1/3 cup vegetable broth
cheddar cheese

Do:
Saute the ground meat until brown, drain if necessary. Preheat 350 degrees. Saute the onion, garlic and jalapeno until soft then add the ground meat back into the pan with the black beans and corn, season with the taco spice. Let cook until incorporated and stir in about 1/4 cup of cheese. Set aside and prep the peppers by slicing in half and remove ribs and seeds. Place the peppers in a high sided dish and fill with the filling and top with cheese. Pour 1/3 cup vegetable broth into the pan, cover with aluminum foil and pop in the oven for 45 mins. 


Serve with avocado dressed with a little lime juice and sour cream. Plus in our house Tabasco gets doused on most things.
