Taste it: Chili

Chili. A quintessential winter meal. It is warm, filling and can be thrown together with a lot of items already in your pantry. This is a simple chili and can be easily adapted to feed a lot of mouths or just a few. You can choose to use ground beef or ground turkey or omit the meat entirely. 
Gather:
2 mediums onions, diced
2 bell peppers, diced
8 garlic cloves, minced
2 jalapenos, seeded and diced (i used one green and one red or fresno chili)
1/4 cup chili powder
1 Tbl cumin
1 Tbl red pepper flakes
1 Tbl paprika
2 tsp coriander
1 tsp oregano
1 tsp cayenne pepper
2-15oz cans dark red kidney beans, rinsed
1-28oz can diced tomatoes
1-28oz can tomato puree
1 1/2 lbs of lean ground beef or ground turkey

Do:
Cook all of the chopped vegetables and spices in a Dutch oven until soft and fragrant. Add in the meat and cook, breaking into pieces until no longer pink. Add in the diced tomatoes and tomato puree. Stir and bring to a boil. Reduce to a simmer and add the kidney beans. Season with salt and pepper and simmer for an hour or two.


Serve with sour cream, diced avocado, Tabasco, shredded cheddar cheese and tortilla chips.
