Taste it: breakfast for dinner; sweet potato hash

Here is an easy dinner idea that is full of some of my favourite items like sweet potatoes and over easy eggs, a glorious sweet potato hash. Who doesn't love breakfast items for dinner? Well, if you do then I am sorry for what you are missing out on and thankfully no one at our house turns down a dinner of items that are more likely seen at breakfast rather than dinner. This meal comes together pretty quickly so it is perfect for a crazy evening or even a hot one where you do not want your oven turned on.

Gather:2 medium sweet potatoes1 onion
1 bell pepper

1 cup (give or take) of arugula or kale or swiss chard, slightly chopped

eggs

hollandaise (optional, but yummy)

spicy italian sausage (turkey or pork)

Do:
Peel and dice up the sweet potatoes, onion and bell pepper. Over a medium/high heat add olive oil to coat the pan and when shimmering add the sweet potatoes in a single layer. Season with salt and pepper and leave them alone for a couple of minutes. If you try to move them around in the pan they will stick and make a mess, not what you are looking to do! Meanwhile, cook the sausage in a small pan, breaking up into small pieces until golden brown. Drain and set aside. Once the sweet potatoes have a good crust, move them around the pan and add the onion and bell pepper and cook until everything cooked. Add in the sausage and kale or other greens and cook until wilted and tender. Turn the heat down on the hash and cook your eggs how you like, we like them over easy so you have a lovely runny yolk but that is not everyone's taste. Spoon out the hash and top with an egg. If you want to go decadent drizzle a little bit of hollandaise over top and I garnished with some chopped basil. Serve warm and enjoy!
